Things You’ll Need:

Ingredients: The crust recipe is enough to make two (2) pie crusts. You can double the pie filling ingredients if you want to make two pies.

Crust: 2 cups of flour

1 Teaspoon of salt

1/2 Cup of canola oil

1/4 Cup of milk

Pie Filling: 3 Eggs

1 Cup of Sugar

1 Stick of Butter
-
Yellow Corn Meal (about 1 tbsp)

Vanilla Flavoring

Lemons, and a Zester (if you don't have one, you can use a cheese grater and get the same effect

At least 4 Mixing Bowls

Oven preheated to 350 degrees F
Step1
Go ahead and preheat the oven to 350 degrees and have all your ingredients handy in the kitchen. At least 4 bowls, spoons, zester or cheese grater etc.
Step2
For the crust start with mixing the salt (1 tsp) and the flour (2 cups) in a large mixing bowl. In a separate mixing bowl mix the canola oil (1/2 cup) and the milk (1/4 cup). Slowly pour the oil/milk mixture into the larger mixing bowl with the salt and flour, and stir until it mixes well and forms into dough. If it is to dry, you can add a little more milk but not to much or it will be runny. Separate into two (2) dough balls and roll crust in between two (2) sheets of wax paper. Once flattened out to thickness of 1/4 inch (or whatever you prefer) line the pie pan with the rolled out dough. Save the second ball of dough in the freezer and you will have a ready made pie crust when needed.
Step3
The oven should be ready by now. Cut lemons and collect the juice from 1 and 1/2 lemons. Melt your butter (1 stick) in a separate mixing bowl and once melted mix in the sugar (1 cup). In separate mixing bowl beat the eggs (3) and add vanilla (1 tsp), cornmeal (1 tbsp), lemon juice (1 & 1/2 lemons) and zest (not much, just a pinch). Combine the egg mixture with the butter/sugar mixture and mix well. Pour the filling into the pie crust you have all ready prepared. Bake pie in pre heated oven for 50 minutes or until light golden brown on top. Let cool for 20 minutes to allow the filling to set. Then enjoy!
