Blacken walnuts for 10 minutes in evoo over medium heat Add port. Mushrooms for another 5-7 minutes Move mushrooms / walnuts to one side and take this side off heat

Reduce heat slightly and add green and yellow squash, drizzle lemon juice over only squash side and add evoo and oregano.
Cook until tender

Cook pasta, add in lemon zest/ lemon juice from entire lemon, finely chopped spinach and fresh diced tomato.
