This a great article, but I might add particular names of spices to ensure that it is a true Cajun dish. Maybe indicate bay leaves or a Southern style-spice like Paul Prudhomme's Magic Seasonings. Also, I might suggest another sausage as an alternative to andouille. Andouille is hard to come by in other parts of the country besides the South.
