Make Cajun Pasta with Andouille and Shrimp

Learn how to make this fantastic tasting pasta with Andouille sausage and shrimp. Great for sharing with guests, or for personal treat!

Instructions

Things You'll Need:

  • Andouille Sausage
  • Canned, chopped tomatoes
  • White Wine
  • Cream
  • Onions
  • Shallots
  • Garlic
  • Shrimp
  • Spices
  • Bread
  • Cheese
  • Parsley
  • Olive Oil
  1. Step 1
     

    Roast peppers and remove the skin.

  2. Step 2
     

    Finely chop the Shallots, onions, garlic, and tomatoes.

  3. Step 3
     

    Add spices

  4. Step 4
     

    Sweat the onions, shallots, then add the peppers

  5. Step 5
     

    Add the garlic, spices, tomatoes, and some white wine

  6. Step 6
     

    Andouille and shrimp

  7. Step 7
     

    Add the andouille, let simmer for 20 minutes

  8. Step 8
     

    Simmering

  9. Step 9
     

    Rub garlic on bread, drizzle olive oil and toast

  10. Step 10
     

    Garlic Bread done.

    Add cream

  12. Step 12
     

    Right before it is served, turn off the heat and add shrimp, stir them in, they cook in one minute

    Finished Cooking

on 6/4/2007 This a great article, but I might add particular names of spices to ensure that it is a true Cajun dish. Maybe indicate bay leaves or a Southern style-spice like Paul Prudhomme's Magic Seasonings. Also, I might suggest another sausage as an alternative to andouille. Andouille is hard to come by in other parts of the country besides the South.
