How to Use up Zucchini

Zucchini are easy to grow and so prolific, you can find yourself with an army of green monsters, more than you can eat. Here's how you can use up that zucchini glut.

    • Zucchini

        Cut them in half, scoop out the seeds and make zucchini boats to cook in the oven. You can stuff them with almost anything.

        Make zucchini bread.

        Chop them up and roast them in a hot oven with olive oil and salt. They go well with tomatoes and onions. Add some herbs like oregano or thyme if you like.

        Cut them into slices and coat them in batter and deep-fry them.

        Grate them and make zucchini fritters.

        Make zucchini pickles. They're similar to cucumbers and can be pickled. You can find recipes on the Internet.

        Toss some chopped zucchini in soups, stews, chili or just about anything. They don't really draw attention to themselves but sneaking them past kids can be challenging.

        Cut them off at the pass. Before they turn into monsters, pick them when they're little and roast them whole.
