How to Make Pecan-Crusted Chicken

  • 1/2 cup milk
  • 2 lightly beaten eggs
  • 2 tbsp. butter
  • 1/2 tsp. ground cinnamon

  • 4 cups fresh spinach
  • 1/2 tsp. ground cinnamon
  • 2 tbsp. butter
  • 1 cup coarsely chopped pecans
  • 1 tbsp. maple syrups
  • 1/2 cup yellow cornmeal
  • 1/2 tsp. peppers
  • 1 tsp. salt
  • 4 boneless, skinless chicken breasts
  • 2 lightly beaten eggs
  • 1/2 cup milk
  1. Step 1

    Pound chicken breasts to ¼-inch thickness between two sheets of waxed paper.

  2. Step 2

    Combine cinnamon, salt, pepper and cornmeal.

  3. Step 3

    Dip chicken in milk and coat with cornmeal mixture.

  4. Step 4

    Dip chicken in egg, then coat with pecans.

  5. Step 5

    Melt 1 tbsp. butter in skillet.

  6. Step 6

    Add chicken and cook for 3-4 minutes on each side, or until well browned and cooked through.

  7. Step 7

    Drizzle chicken with maple syrup.

  8. Step 8

    Melt remaining butter in skillet over medium heat.

  9. Step 9

    Add spinach and cook until wilted but still bright green, about 2-3 minutes.

  10. Step 10

    Serve chicken over spinach.

Tips & Warnings
  • Serve with garlic mashed potatoes or something with a little kick, to cut the sweetness.
