How to Make a Quinoa Salad

A quinoa salad is a refreshing change to the usual leafy green salad and it's high in protein. Quinoa is great as a side dish, a substitute for rice, or in a salad.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 cups quinoa
  • 1 can of organic corn
  • 1 can of sliced black olives
  • two bunches of green onions
  • olive oil
  • white balsamic vinegar
  • red chili powder
  • salt and pepper to taste
  1. Step 1

    Get a medium sized sauce pan and put it 4 cups of water and 2 cups of quinoa (2:1 ratio of quinoa to water). Bring to a boil, cover the pan with a lid and simmer on low for 15 minutes

  2. Step 2

    Rinse canned corn and olives and chop two bunches of chives and put them in a bowl.

  3. Step 3

    Add olive oil, balsamic vinegar, salt, pepper and red chili powder to taste.

  4. Step 4

    Take cooled quinoa, fluff it and add it to the bowl of vegetables. Mix and serve!

Tips & Warnings
  • quinoa is pronounced keen-wah
  • you can also use a rice cooker to make the quinoa
  • quinoa flour can be used in wheat-based and gluten-free baking
