How to make mushroom pate

Mushroom pate is lovely served with crisp lettuce or watercress, melba toast or used as a sandwich filling.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 lb (450g) button mushrooms
  • clove garlic, crushed
  • 2 oz (50g) butter or margarine
  • salt and pepper
  1. Step 1

    Wipe clean the mushrooms, then cut into slices.

  2. Step 2

    Heat butter/marg in a large saucepan, then add the mushrooms and garlic.

  3. Step 3

    Cook over a moderate heat until the mushrooms are soft and the water (from the mushrooms) has evaporated. This could take anything up to about 20 minutes.

  4. Step 4

    Puree the mushrooms with a food processor or blender.

  5. Step 5

    Season with salt and pepper to taste.

  6. Step 6

    Press into a pate dish or tin, or some other small bowl and leave to cool

Tips & Warnings
  • Serve with crisp lettuce leaves or watercress with a garnish of chopped chives and lemon slices.
  • Keep refrigerated and use within 3 days.

on 6/3/2007 It's more like a paste when I make it. I tried something new with it the other day: I toasted one side of some bread, then turned it over. On the other side I spread a thin layer of tomato puree, then a thick layer of mushroom pat, topped it with thick slices of Cheddar cheese and toasted it. It was really nice.
