How to Make Fresh Catch Special

Here's a great one-dish meal that combines rice, vegetables, fish and prawns. Who could ask for anything more? Serves four to six.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 12-20 Jumbo Prawns
  • Lemons Wedges
  • 1 c. white wines
  • 2 1/2 tbsp. butter
  • 1-1/2 c. sliced mushrooms
  • 1 tomatoes - diced
  • 1-1/2 lbs. firm white fish fillets - cut into 6 pieces
  • 2 tbsp. finely chopped Italian parsleys
  • 1/4 c. vegetable oils
  • 2 tbsp. lemon juices

Step1
Marinate fish in oil and lemon juice for 15 minutes.

While fish is marinating, prepare rice pilaf. (See "How to Make Basic Rice Pilaf" in Related eHows.)
Step3
Heat the broiler.
Step4
Heat 1/2 tbsp. butter in a skillet over high heat. Add mushrooms and brown. When mushrooms have stopped releasing juices, remove from heat and set aside with tomato.
Step5
When the pilaf has 10 minutes to go, place fish on a broiler pan. Brush with some of the marinade.
Step6
Broil fish for 4 minutes on each side, brushing the other side with the marinade when you turn it. The fish should flake easily with a fork.
Step7
Heat the remaining butter over medium-high heat in a large skillet.

Add prawns and sauté for 1 minute. Add wine, lower the heat to medium-low and cook for another 2 minutes or so, until the prawns are no longer pink. Remove from heat as soon as the prawns are cooked.
Step9
Stir tomato and mushrooms into rice mixture.
Step10
Top rice with prawns and fish, and garnish with parsley.

Tips & Warnings

  • Halibut and swordfish work well in this dish.
  • You can toss some rinsed artichoke hearts into the rice as well.
