How to Make a Low Fat Cheesecake
Cheesecake lovers, rejoice! This cheesecake has half the fat of a traditional New York style cake and tastes just like the real thing. Does this Spark an idea?
Things You'll Need
- 2 cups graham cracker crumbs
- 2 tbsp. reduced-fat margarine (melted)
- 2 8 oz. packages light cream cheese
- 2 8 oz. packages nonfat cream cheese
- 1 cup white sugar
- 3/4 cup egg substitute
- 1 cup nonfat plain yogurt

Preheat your oven to 300 degrees F.

Combine graham cracker crumbs and margarine. Spray the inside of a spring form pan with nonstick spray and press the crumbs into the bottom.

Mix together the light cream cheese, nonfat cream cheese and sugar. Blend until smooth.

Add eggs and yogurt to the cream cheese mixture and beat for 2 minutes.

Pour the cream cheese mixture into your graham cracker crust.

Bake in the preheated oven for 1 hour and 40 minutes.

Remove the cake from the oven. Chill for 2 hours before removing the rim of the pan.

Serve the low fat cheesecake topped with your favorite fresh fruit.

Tips & Warnings
Do not substitute more nonfat cream cheese in an attempt to make this even lower fat. It will compromise the taste.
Try to find reduced sugar or sugar-free graham crackers and make your own crumbs.

I have made this several times, and have often been specifically asked to bring this to get-togethers! I often melt a little chocolate to drizzle on it along with pecans or walnuts. I use butter (it's only 2T!) and I use 1 large egg instead of the substitute. It turns out great-and actually tastes like cheesecake is supposed to, not completely overdone with random flavors.
