Cheesecake lovers, rejoice! This cheesecake has half the fat of a traditional New York style cake and tastes just like the real thing.

From Quick Guide: Cheesecake Recipes
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 cups graham cracker crumbs
  • 2 tbsp. reduced-fat margarine (melted)
  • 2 8 oz. packages light cream cheese
  • 2 8 oz. packages nonfat cream cheese
  • 1 cup white sugar
  • 3/4 cup egg substitute
  • 1 cup nonfat plain yogurt
  1. Step 1

Preheat your oven to 300 degrees F.

  2. Step 2

Combine graham cracker crumbs and margarine. Spray the inside of a spring form pan with nonstick spray and press the crumbs into the bottom.

  3. Step 3

Mix together the light cream cheese, nonfat cream cheese and sugar. Blend until smooth.

  4. Step 4

Add eggs and yogurt to the cream cheese mixture and beat for 2 minutes.

  5. Step 5

Pour the cream cheese mixture into your graham cracker crust.

  6. Step 6

Bake in the preheated oven for 1 hour and 40 minutes.

  7. Step 7

Remove the cake from the oven. Chill for 2 hours before removing the rim of the pan.

  8. Step 8

Serve the low fat cheesecake topped with your favorite fresh fruit.

Tips & Warnings
  • Do not substitute more nonfat cream cheese in an attempt to make this even lower fat. It will compromise the taste.
  • Try to find reduced sugar or sugar-free graham crackers and make your own crumbs.

on 3/21/2008 I have made this several times, and have often been specifically asked to bring this to get-togethers!
I often melt a little chocolate to drizzle on it along with pecans or walnuts. I use butter (it's only 2T!) and I use 1 large egg instead of the substitute. It turns out great-and actually tastes like cheesecake is supposed to, not completely overdone with random flavors. Try it, you might just love it!
