How to Make Tex-Mex Queso

This is a common staple of any Tex-Mex menu. Unfortunately, it is tough to find in restaurants outside of Texas. With this recipe, you can now bring Texas home. Does this Spark an idea?

Things You'll Need

  • 12 oz block of light Velvetta
  • 1 can of Rotel
  • Olive oil
  • 1/2 lb ground turkey sausage
  • 1 can of chopped green chilies
  • Large pot
  • Skillet
  • Flour tortillas
  • Tortilla chips

Instructions

    • 1

      Cook ground turkey in a skillet on stove top until brown. When brown, remove skillet from the stove and proceed to drain grease into an empty bowl.

      Chop Velvetta into bite-sized cubes.

      Turn on stove to low-to-medium. Drizzle olive oil in the bottom of the pot.

      Add Velvetta cubes, Rotel, green chilies and turkey sausage into the pot. Stir constantly. Heat throughout until cheese is melted.

      Pour into a chip-and-dip dish and serve with warm tortillas or tortilla chips.

Tips & Warnings

  • Rotel comes in different varieties of spice. Recommend medium when serving dish to newbies.

  • If you are out of olive oil, you can sub with milk.

  • Never drain grease in the kitchen sink.

  • Do not let the cheese sit without stirring. It will burn on the bottom.
