How to Make Garlic-Butter Brussels Sprouts

Much maligned Brussels sprouts get the royal treatment with garlic sautéed in butter. The combination of garlic and butter is a match made in heaven. These two ingredients can transform any plain dish into a sublime treat for the tongue. Try using this recipe with different vegetables and meats to see what you like the best.

Things You'll Need:

  • ½ lb young Brussels sprouts
  • 1 ½ Tbsp unsalted butter
  • 1 Tbsp garlic
  • salt and pepper to taste

  • Medium sauce pan
  • Vegetable steamer
  • Medium saute pan
  • kitchen tongs
  1. Step 1

    Choose Brussels sprouts that are firm and have tight, dark and dusky green leaves.

  2. Step 2

    Wash the Brussels sprouts well. Cut the very bottom of the stem off. Cut each sprout in half lengthwise, then cut a notch into the thick base of the sprout ¼-inch deep. This helps to distribute the heat evenly through the Brussels sprout. Set aside.

  3. Step 3

    Peel the skins off of two cloves of garlic. Finely mince the garlic into pieces no larger than 1/8-inch in size. Set aside the amount you need.

  4. Step 4

    In a medium-sized sauce pan, set a vegetable steamer on the bottom.

  5. Step 5

    Draw at least ½-inch of water in the pan. The water should not cover the bottom of the steamer. Heat the pan over high heat.

  6. Step 6

    When the water begins to boil add the Brussels sprouts to the steamer. Cover the pan and lower the heat to medium-low heat.

  7. Step 7

    Let the Brussels sprouts steam for approximately five to eight minutes, until the sprouts have turned bright green and are soft when you prick one with a fork.

    While the Brussels sprouts are steaming, heat a medium-sized sauté pan over medium heat. When the pan is hot, add the butter to the pan and coat the pan.

  9. Step 9

    Once the butter has melted, add the garlic to the pan and sauté for approximately 30 seconds. Add the steamed Brussels sprouts to the pan and continue sautéing for another two minutes.

  10. Step 10

    Add salt and ground pepper to your tastes to the pan and evenly coat the Brussels sprouts with the garlic and butter.

  11. Step 11

    Serve immediately as a lovely side dish or as part of a main dish.

Tips & Warnings
  • If the Brussels sprouts have leaves that are loose-feeling, pull those off and discard them.
  • Steaming the Brussels sprouts will help to leech much of the bitter taste from the sprouts.
  • Store Brussels sprouts for three days refrigerated at the most. After that, they become dry and tasteless.
