Things You'll Need:
- 1 ½ c all-purpose flour
- 3 Tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 c milk
- ½ c carbonated strawberry soda
- 3 Tbsp unsalted butter
- ½ tsp vanilla extract
- ½ lb strawberries
- 1 Tbsp vegetable oil
- Above ingredients
- small sauce pan
- Large bowl
- Whisk
- griddle or large saute pan
- spatula

Step 1
In a small bowl or sauce pan, melt the butter. Set aside.

Wash the strawberries well. Cut the green tops off and discard. Thinly slice the strawberries into slices no thicker than ¼-inch thick. Set aside.

In a medium bowl crack the eggs. Whisk the eggs well until they have lightened in color and are fairly foamy.

Add the milk, strawberry soda, butter and vanilla extract to the egg mixture. Whisk the liquids together well. Set aside.

In a large bowl, sift the flour, sugar, baking powder and salt together. When all of the dry ingredients are well combined, slowly add the liquid ingredients into the bowl in ½-cup increments. Mix well after each liquid addition.

Once all of the liquids have been added to the bowl, add the sliced strawberries and thoroughly mix the batter until it’s just smooth. A few lumps won’t hurt the batter.

Heat your griddle or large sauté pan over medium-high heat. When the pan feels hot, flick a small amount of water onto the pan. The drops of water should sputter for a few seconds before evaporating. This is when the pan is at the right temperature.

Pour a teaspoon of oil onto the pan and quickly distribute it across the bottom by tilting the pan.

Pour the batter in 1/3-cup increments onto the hot pan.

The batter should immediately form bubbles on the top of the batter. When the edges of the pancake start to dry and the bubbles start to look like holes, approximately 45 seconds, flip the pancake over and cook for a further minute.

When both sides of the pancake are golden brown, transfer them onto a serving plate.

Serve immediately with any syrup, butter or fruit you wish.
