How to Make Pecan Pralines

Pecan pralines are a delicious treat and they’re easier to make than you might think. You’ll need a candy thermometer for this recipe, to make sure that you heat the pralines to the right temperature.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup light cream
  • 2 cup pecans
  • 1/8 tsp soda
  • 1/8 tsp salt
  • 2 tsp vanilla
  • 1/4 cup butter
  • Brown sugar
  • Butter
  • Salt
  • Pecans
  • Soda
  • White sugar
  • Vanilla
  • Light cream
  1. Step 1

    Mix all the ingredients except for the nuts and vanilla in a heavy-bottomed 2-quart pan.

  2. Step 2

    Bring to the boil over a medium heat until all the sugar has dissolved.

  3. Step 3

    Continue boiling until the mixture reaches 234 degrees F. Do not stir.

  4. Step 4

    Remove from the heat when the mixture is the right temperature.

  5. Step 5

    Beat in the nuts and vanilla.

  6. Step 6

    Lay out a double sheet of waxed paper onto a bench.

  7. Step 7

    Drop tablespoons of the mixture on the paper.

  8. Step 8

    Allow to cool before eating.

Tips & Warnings
  • If you don’t have a candy thermometer, boil until the mixture reaches the soft ball stage. To check you’re at the right stage, drop a small amount of mixture into cold water—it will form a soft ball when the candy is at the right temperature.
