How to Make Pecan Pralines

Pecan pralines are a delicious treat and they're easier to make than you might think. You'll need a candy thermometer for this recipe, to make sure that you heat the pralines to the right temperature. Does this Spark an idea?

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup light cream
  • 2 cup pecans
  • 1/8 tsp soda
  • 1/8 tsp salt
  • 2 tsp vanilla
  • 1/4 cup butter

Instructions

    • 1

      Mix all the ingredients except for the nuts and vanilla in a heavy-bottomed 2-quart pan.

      Bring to the boil over a medium heat until all the sugar has dissolved.

      Continue boiling until the mixture reaches 234 degrees F. Do not stir.

      Remove from the heat when the mixture is the right temperature.

      Beat in the nuts and vanilla.

      Lay out a double sheet of waxed paper onto a bench.

      Drop tablespoons of the mixture on the paper.

      Allow to cool before eating.

Tips & Warnings

  • If you don't have a candy thermometer, boil until the mixture reaches the soft ball stage. To check you're at the right stage, drop a small amount of mixture into cold water-it will form a soft ball when the candy is at the right temperature.
