How to Make a Non-Alcoholic Lava Flow

A creamy, cold drink originally from Hawaii, the Lava Flow cocktail usually contains rum. The mocktail version of this drink makes use of tropical fruit juices and coconut milk and cream to provide the same punch of flavor, but without the alcohol. This recipe is inspired by ones from Mel’s Kitchen Cafe and Hawaii Magazine.


  • 2/3 cup coconut cream

  • 1/2 cup fresh pineapple

  • 1/2 banana, sliced

  • 1/3 cup of strawberries, thawed

  • 1 teaspoon white sugar

  • 2 tablespoons simple syrup

  • 1 teaspoon vanilla extract

  • 1/8 cup plus 1 tablespoon water

  • 1/8 cup ice

  • Mint leaves

  • 1 lime wedge for rim

  • White sugar for rim


Rub the rims of two tall glasses with the lime wedge. Dip the edges of the glasses into a plate of white sugar and set them aside.


  • Use flavored or colored sugar to rim your glass for a more eye-catching presentation.

Puree the thawed strawberries, simple syrup and 1 tablespoon of water in a blender until very smooth. Pour it out and reserve.

Rinse the blender and add the coconut cream, sugar, remaining water, sliced banana, vanilla extract and ice. Pulse until smooth. If the mix does not pour easily, thin it with coconut cream or water until it reaches the desired consistency.

Pour 1 tablespoon of the strawberry syrup into the bottom of a glass. Repeat with the second glass.

Tipping each glass on its side, pour the pineapple and coconut mix along the side of the glass, so it combines only slightly with the strawberry mix. Stop filling halfway.

Pour the remainder of the strawberry mix over the back of a spoon evenly into the two glasses. The strawberry should sit on -- not blend with -- the coconut.

Pour the rest of the coconut mix directly into each glass. The second layer of coconut juice should mix a little with the strawberry layer.

Garnish with mint leaves and serve with a straw.


The strawberry and coconut blends do not have to be added separately. They can also be blended together for a faster, easier-to-make drink.

Add warming spices to either the strawberry or coconut mix for a novel twist on the drink. Consider adding ground:

  • Nutmeg;

  • Allspice;

  • Clove;

  • Ginger powder; or

  • Cinnamon.

To make the drink richer, omit the vanilla extract and add 1/2 cup of vanilla ice cream, blending it with the coconut and pineapple.
