Trying to pack a good lunch for on-the-go or on a hike can be tricky—it needs to be compact yet packed full of good nutrition. I find that bread often dries out when I bring a sandwich unless I pack it in ziplock bag AND a plastic sandwich holder—but holders can be bulky in a daypack. My solution? Roll-ups.

Difficulty: Easy
Instructions

Things You'll Need:

  • Turkey (or cheese or tuna or… whatever floats your taste buds)
  • Flour tortillas (corn tend to crumble)
  • BBQ sauce (or mustard or mayo… or…)
  • Lettuce
  • Chopped carrots
  • Chopped red pepper
  • Foil or large ziplock bag
  1. Step 1
     

    Pour a half-dollar size dollop of barbecue sauce on the tortilla and spread with the back of a spoon. Mustard or mayo work, too, whatever you like that has zip. On a long hike or a long day at the office, you need zip.

  2. Step 2
     

    Layer on the turkey (or tuna or cheese slices).

  3. Step 3
     

    Add the lettuce (not too much or it all falls out).

  4. Step 4
     

    Add a few bits of chopped carrot—and my special ingredient, chopped red pepper. The pepper bits give the roll-up a nice crunch and add a dab of moisture.

  5. Step 5

    Roll the whole thing over—and here’s the tricky part: place it in the foil or ziplock bag and then roll the foil or bag OVER IT so it all stays rolled up. Don’t seal the bag until you’re done rolling.

  6. Step 6
     

    Take out and enjoy when you’re energy is flagging and you need a protein pick-me-up to get you through the rest of the hike or day at work.

Tips & Warnings
  • While tomato and avocado are truly wonderful additions to a roll-up, they are squishy and messy. If you love them, consider packing those ingredients in separate baggies and adding them just before you dine.
