My friends Lisa and Rich have been on a lo-carb diet for several months and they've had tremendous success. Rich loves to cook and dreamed up this lo-carb crepe recipe. It makes 9 to 12 yummy crepes--enjoy!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 3 eggs
  • 1 cup non-fat yogurt
  • 1/2 cup soy or low fat milk
  • pinch of salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 cup flour
  • no-fat cooking spray
  • fun additions: fresh fruit, reduced sugar preserves.

Step1
Combine and stir all of the above ingredients with a whisk (minus the fun additions). Batter should be fairly thin.
Step2
Coat a frying pan with a little no-fat cooking spray and heat up.
Step3
Cook the mixture until golden brown, flipping over once to do both sides.
Step4
Slide the crepe onto a plate and fill with the additional goodies. Roll 'er up and top with light whipping cream, if you desire.

Tips & Warnings

  • For a savory and protein treat, add a little cheese or meat inside the crepes.

on 5/7/2008 Please ask Rich how big these crepes are. I can't imagine that 1/2 cup flour would make 9-12 crepes. Also, this is more of a low-fat recipe, not a low-carb recipe. Milk and flour are not low-carb ingredient and all the other ingredients specify low-fat or non-fat. I hope he is using sugar-free soy milk, because all the other soy milks are high in carbs.

If Rich would like a truly low-carb crepe recipe made with low-carb ingredients, let me know.
