How to Make Wassail

The Romans are credited with introducing sweetened, spiced wine or beer to the winter celebrations of northern Europe. This version can be made with wine or apple cider.

Instructions

Things You'll Need:

  • 1 gallon apple cider or hard apple cider
  • 2 cinnamon sticks
  • 10 whole cloves
  • 10 allspice berries
  • 1 tsp. ground ginger
  • 4 cups water
  • 1 seedless orange, quartered
  • 1 to 3 cups brandy or sherry, to taste (optional)
  • Brown sugar, to taste

  1. Step 1

    In a large saucepan, combine the cider, spices, water and orange. Bring the mixture to a boil, reduce heat and simmer 1 hour.

  2. Step 2

    Strain the spices from the liquid and return the liquid to the pot. Add brandy or sherry, if desired, and sweeten to taste with brown sugar.

  3. Step 3

    Simmer 10 minutes longer, then serve hot.

Tips & Warnings
  • If you can find very small apples, peel and core a few, then add them to the mix.
  • You can also try making Wassail with dark beer.
