This is the sensationally frothy iced coffee that is wildly popular in the cafes and on the beaches of Greece. You can read more about the frappe phenomenon at www.frappenation.com.
Place the coffee, sugar to taste, and 1/4 cupwater in a shaker, jar, or drink mixer. Cover and shake well for 30 seconds or, if using a standing or hand-held drink mixer, process for 10 seconds to produce a thick, light-brown foam.
Step2
Place a few ice cubes in a tall glass. Slowly pour the coffee foam into the glass. Add a little milk, if desired, according to taste. Fill with cold water until the foam reaches the top of the glass. Serve with a thin, bendable straw and glass of cold water on the side.
Tips & Warnings
Although you can use any instant coffee, Nescafé works best. And although you can use any Nescafé, the company's stronger blends, such as those marketed in Greece, Spain, and Mexico, create the best-tasting frappes. You can find the Greek Nescafé at Greek food markets around the country or on eBay. Mexican Nescafé is often found in American supermarkets, especially those with a sizeable Hispanic clientele.

As an added tip to the frappes they've described here, but only after the blending/shaking and adding ice then if you need milk, cream or whatever your choice add it AFTER everything else and before inserting your straw and than it's perfect!
