How to make minestrone

What could be better and healthier than homemade minestrone !

Instructions

Difficulty: Easy

Things You’ll Need:

  • slow cooker
  • 1 medium onion, chopped
  • 2 medium carrots, thinly sliced
  • 2 stalks celery, cut into 1/2 inch pieces
  • 1 red bell pepper, seeded, cut into 1/2 inch
  • pieces
  • 1 medium zucchini, scrubbed, sliced into 1/2 inch
  • rounds
  • 2 cloves garlic, minced
  • 2 14 1/2 oz. can vegetable broth
  • 1 28 oz. can crushed tomatoes
  • 2 15 1/2 oz. cans kidney beans, drained
  • 2 tsp. dried marjoram
  • 1/4 tsp. coarsely ground black pepper
  • 1 1/2 cups cooked rice

Step1
Add all ingredients except rice to crock pot.
Step2
Cover and cook on low 8 to 10 hours or high 4 to 5
hours.
Step3
Add cooked rice and stir to combine. Makes 8 servings.

Tips & Warnings

  • It's minestrone - serve with garlic bread, maybe some sauteed mushrooms, get Italian !
