Things You'll Need:
- scrambled eggs, bacon, pepperjack cheese, onions

Step 1
Trim any excess fat from your bacon. You want to leave some of the fat but be sure to take off some of it.

In a non stick frying pan place 3 strips of high quality bacon. I suggest using applewood smoked bacon if it is available. Fry the bacon until it is cooked thru and mildly crisp.

Step 3
Remove the bacon from the pan and place it on paper towels to soak up the fat. DO NOT REMOVE THE RESULTING BACON GREASE FROM THE FRYING PAN.

Step 4
Scramble the eggs and add them to the frying pan that still contains the bacon grease. Cooking the eggs in the bacon grease is the secret step to world class scrambled eggs.

Step 5
At your discretion you can add the shredded pepperjack cheese, and onions to the eggs. I also recommend a healthy dose of salt and pepper.

Step 6
Serve and enjoy.

Yep, that's the way we do it in the South too...of course:)) Sometimes, I also like to add a little milk or cream to the egg mixture before scrambling. YUMMY!!! Thanks Chap for a great How-to. Now, I'm going in the kitchen and get out the eggs:))
