How to make quick, easy, kid-friendly meatloaf

Here is a quick and easy meatloaf recipe that even my kids will eat. Serve with a pile of garlic mashed potatoes and that's what I call comfort food!

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 cup Stove Top Stuffing mix
  • 1 cup skim milk
  • 3 eggs
  • 1/2 cup ketchup
  • 2 1/2 pounds lean ground beef

Step1
Mix 1 cup Stove Top Stuffing mix, 1 cup skim milk, 3 eggs, and 1/2 cup ketchup in a large mixing bowl.
Step2
Mix the ground beef in thoroughly.
Step3
Place in a 2 quart baking dish.
Step4
Bake at 350 degrees for about 50 minutes, until temperature reaches 160 degrees.

Tips & Warnings

  • I use skim milk and 93% lean ground beef, but 2% or whole milk would be fine.
  • Always use a meat thermometer to guarantee the meatloaf is thoroughly cooked and safe to eat.
