Homemade apricot preserves are easy to make and you will enjoy them all winter long. Here is how

Difficulty: Easy
Instructions

Things You'll Need:

  • You will need fresh apricots, cut in half and without the seeds (2 lbs)
  • White Sugar (2 lbs)
  1. Step 1

Put apricots in a big cooking pot and cover it with sugar. Let it stand in a room temperature until apricots give out the juice. The best way is to let them stand overnight.

  2. Step 2

Next, cook apricots on the stove until they start boiling, reduce the heat but make sure you still have preserves boiling. Boil for 10 minutes, stirring constantly to prevent sugar from burning and removing the white foam from the top with a spoon. After 10 minutes, remove preserves from the stove and let stand in a room temperature for a day.

  3. Step 3

The next day, boil preserves again for 10-15 minutes as you have done before. You can repeat this procedure for another day, but usually two times is enough. Afterwards you let preserves cool off.

  4. Step 4

Once preserves cooled off, you can put them into the jars. I recommend glass preserving jar with rubber sealing ring and metal lever arm sealing mechanism. You can buy these jars in a cookware store or other supermarkets. Store preserves in refrigerator.

  5. Step 5

When cooking the preserves, don't forget to taste them!

Tips & Warnings
  • You can substitute apricots for other berries and fruit, for example, strawberries, raspberries, plums and etc.
  • You can also cook more/less than 2 lbs batches at a time. Important thing is that proportion of fruit to sugar is 1 to 1. So, for 1 lb of apricots you will need 1 lb of sugar, for 3 lbs of apricots you will need 3 lbs of sugar.
  • Do not overcook, you may end up with marmalade and not preserves.
  • Make sure you seal jars properly, so preserves do not spoil.
