An easy meal to make when you are low on food in the fridge. Zippity Zap and it's done!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Frying pan, tortillas, cheddar, Monterey Jack, cilantro, salsa, black beans, onion
  1. Step 1

Heat a skillet to medium high heat. Spray the bottom of the pan w/ an olive oil spray (a healthier alternative to a heavy oil coating the pan)

  2. Step 2

Add tortilla to pan, sprinkle with the cheddar and Monterey Jack cheese, add chopped onion, cilantro, sour cream, and black beans.

  3. Step 3

Put a second tortilla on top of the cheese, onion, black beans. Grill until the tortilla is golden brown, then flip the tortilla over and cook the other side (be sure to spray w/ the olive oil spray again).

  4. Step 4

Remove quesadilla from pan, sprinkle with garlic salt, chili powder or cayenne pepper for taste. Serve with a side of salsa and/or sour cream.

Tips & Warnings
  • If you like meat- feel free to add chicken or swine. You can also add more vegetables if you'd like. If you are trying to gain weight, add guacamole, extra cheese and sour cream.
  • Use caution when flipping the tortilla - contents may shift during the flipping.
  • Do not leave your quesadilla unattented while cooking.

on 12/10/2008 These Directions were awful. No numbers or measurements. No idea whether the beans are to be pre warmed or anything. I wasted a lot of good ingredients on this.
