Just a suggestion. I wanted a dipping oil. I was going to purchase a bunch of herbs and use a receipe from the internet. Instead I purchased a small bottle of McCormick Italiian Seasoning, with the grinder on the top. I ground out about a tablespoon or more in fine, medium and coarse grinds. I added this to a 12 ounce bottle of EVOO. It was great, easy to do, and the longer the herbs were in the oil the better it got.

You can never have enough garlic in there! We buy a garlic infused oil and it is just fantastic with salt, pepper, basil, a little parm cheese and garlic.

Instead of lemon juice, use balsamic vinegar.
