Here's a great spinach recipe.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Groceries
  • Baking Pans
  • Mixing Bowls
  • Wooden Spoons
  • lasagna noodles
  • 1 c. ricotta cheese
  • 1 c. cottage cheese
  • 1 c. thawed spinach
  • salt
  • pepper
  • spaghetti sauce
  • Romano cheese
  • Italian bread

Step1
Cook the lasagna noodles according to package directions, drain and set aside.
Step2
Combine the ricotta cheese and cottage cheese in a large bowl. Stir to mix, then add thawed spinach that has been well drained. Add salt and pepper to taste.
Step3
Take the noodles one at a time and place on a flat surface. Take about 2 tbsp. spinach mixture and spread onto a noodle, then roll the noodle jelly-roll-style and place in a 13-by-15-by-2-inch pan.
Step4
Continue until all the noodles and mixture have been used.
Step5
Top with your favorite homemade or prepackaged spaghetti sauce.
Step6
Top with a sprinkling of Romano cheese and bake at 350 degrees F for 45 minutes.
Step7
Serve with hot Italian bread.

It tasted so good my five year old didn't even notice the spinach!
