How to Make Beet Surprise Cake

Things You'll Need:

  • 2-3 tbsp. cream
  • 3 oz. cream cheese
  • 1 tsp. vanilla extract
  • pinch salt
  • 1 lb. confectioner's sugar
  • chopped nuts

  • 9x13-inch baking pan

    Making the Cake

  1. Step 1

    Grease one 9x13-inch baking pan. Preheat oven to 350 degrees F (175 degrees C).

  2. Step 2

    Sprinkle lemon juice over beets and set aside.

  3. Step 3

    Combine flour, salt, soda, white sugar, cocoa, melted butter, eggs, honey, milk and vanilla in a large mixing bowl. Stir in beets. Beat 2 minutes at medium speed of mixer. Pour into prepared pan.

  4. Step 4

    Bake at 350 degrees F (175 degrees C) about 40 minutes. Cool and frost.

  5. Making the Frosting

  6. Step 1

    Combine cream, cream cheese, vanilla and pinch of salt.

  7. Step 2

    Add confectioners' sugar and beat until fluffy.

  8. Step 3

    Spread on cake.

  9. Step 4

    Add chopped nuts if desired.
