Lime granita is a refreshing ice dessert that you can easily make at home. Granitas are like sorbet but more granular, and they don't require any special equipment.
Strip the zest off one of the limes and chop it roughly.

Place it in a saucepan with the sugar and water and bring to a boil.

Shut off the heat, let it steep for two or three minutes, stirring to dissolve any undissolved sugar.

Strain the sugar mixture into a shallow container and let it cool completely.

Juice the limes and the lemons into the sugar mixture, stir everything together well, then freeze.

Stir it together with a fork as it freezes, every 20 minutes or so, to scrape together the ice film that forms, crush any lumps and fluff it up. This creates granita's signature texture.

Serve it while it's still barely slushy and not frozen solid.
Tips & Warnings
If you don't mind a small bit of alcohol in the recipe, add 2 or 3 tbsp. Triple Sec to this recipe. The orange flavor will help mellow the lime's tartness, and the alcohol (which won't freeze) will keep the texture softer. Stir it together more often as it freezes.
