How to Make Blackberry Granita

This granita, an ice dessert similar to sorbet but easier to make, takes perfect advantage of summer blackberries. This simple recipe makes about 2 c. granita.

Instructions

Things You'll Need:

  1. Step 1

    Place the sugar and white wine in a small saucepan and bring to a simmer.

  2. Step 2

    Simmer for about 5 minutes, then cool completely.

  3. Step 3

    Rinse the blackberries well and drain.

  4. Step 4

    Purée the blackberries by blending them in a food processor or mashing them up by hand. Ripe blackberries should be soft enough to mash by hand.

  5. Step 5

    Strain out the seeds, but force as much of the purée through the strainer as you can. You should have about 1 1/2 c. strained juice and pulp.

  6. Step 6

    Place the cooled sugar mixture and the blackberry juice in a shallow container. Stir the ingredients together and freeze.

  7. Step 7

    As the granita freezes, stir it with a fork every 20 minutes or so, crushing the lumps and fluffing it up. This step creates the granita's signature granular texture.

  8. Step 8

    Serve just before the granita freezes solid.

Tips & Warnings
  • Use a light, dry white wine like sauvignon blanc for this recipe.
  • Don't worry if the granita freezes solid on you. You can scrape it with a fork or spoon, grate it with a clean cheese grater, or even pulse it in a blender. If all else fails, simply let it soften a bit at room temperature and freeze it over again.
