Things You'll Need:
- 1 pound fresh spinach, stems trimmed, rinsed and patted dry
- 4 green onions, cleaned, trimmed, and coarsely chopped
- 1/4 pound bacon, cooked crisp, drained and crumbled
- 2 hard cooked eggs, sliced
- 1 garlic clove, minced
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 2 teaspoons whole grain mustard
- Salt and freshly ground black pepper to taste

Step 1
Tear the spinach into bite-size pieces.

Step 2
Place spinach and onions in a large salad bowl.

Whisk together garlic, vinegar, oil, mustard and salt and pepper in a small bowl to make dressing.

Pour the dressing over the salad just before serving and toss to coat.

Sprinkle bacon over the salad and top with egg slices.
