How to Make Teriyaki Marinade

Teriyaki sauces and marinades are extremely popular flavorings for foods, and so simple to make at home that there's no reason to buy a prepared mix. You can use this marinade/sauce in many different ways. The recipe makes about 1 1/2 cups.

Instructions

Things You'll Need:

  • 1 c. soy sauce
  • 1/2 c. packed brown sugar
  • 1/4 c. rice wine or semi-dry sherry
  • 2 tbsp. minced garlic
  • 3 tbsp. minced fresh ginger
  • 3 tbsp. or so chopped green onion
  • 2 tsp. Asian 5-spice powder (optional)

  1. Step 1

    Place all ingredients in a small saucepan and heat on low heat until the sugar is completely dissolved. Let cool.

  2. Step 2

    Use as a marinade for chicken and shrimp; it's especially tasty. The marinade also works well with beef, pork and vegetables. Marinate food - covered and in the refrigerator - for up to 4 hours (shrimp for only about 30 minutes).

  3. Step 3

    Use as a glaze for grilled foods: Set aside about 1/3 of the mixture before using the remainder as a marinade. Simmer about 5 minutes to reduce. Brush on grilled food when it's almost done cooking.

Tips & Warnings
  • You can modify the flavor of this recipe any way you wish. Chile enthusiasts, for example, can add a little chopped fresh chile pepper or chile oil to this recipe for a spicy kick. If you find it too salty, several types of sugar can be added to sweeten the marinade, including honey and chopped pineapples.
  • Raw meat is still raw meat whether or not it's in a marinade - take appropriate precautions to inhibit growth of bacteria. Always marinate food in the refrigerator. Do not reuse marinades.
