How to Make Grapefruit Sorbet

Sorbets are a wonderful dessert after a rich meal or simply on a hot summer day. A dessert wine and elegant cookies complement this grapefruit sorbet nicely. Serves four. Does this Spark an idea?

Things You'll Need

  • 1 3/4 c. Essencia (or other sweet dessert wine)
  • 2 1/2 c. pink grapefruit juice - freshly squeezed
  • 1/2 c. plus 2 tbsp. sugar
  • 2 tbsp. light corn syrup
  • 1 tbsp. grenadine syrup
  • 1 1/2 tsp. pink grapefruit peel - grated

Instructions

    • 1

      Boil 1 c. wine in a small, heavy saucepan until it has reduced to 1/4 c.

      Pour the wine into a large bowl.

    • 3

      Add the grapefruit juice, sugar, corn syrup, grenadine and peel.

      Stir until the sugar has dissolved.

    • 5

      Mix in the remaining 3/4 c. wine.

      Refrigerate the mixture until cold.

    • 7

      Pour the mixture into an ice cream maker and freeze according to manufacturer's instructions.

      Keep frozen in a covered container.

Tips & Warnings

  • If you don't have an ice cream maker, you can put the sorbet mixture into a freezer-safe covered container and freeze it, stirring about every half-hour so it doesn't freeze into a solid block.
