Lighter than strawberry ice cream but at least as flavorful. Makes about 1 qt.

Instructions

Difficulty: Easy

Things You’ll Need:

Step1
Combine the sugar and water in a saucepan and bring to a simmer. Simmer for 10 minutes until a syrup forms.
Step2
Add the strawberries and lemon juice to the syrup.
Step3
Puree the mixture in a blender.
Step4
Strain the mixture with a fine strainer. Press on the solids to extract as much juice as possible.
Step5
Put the mixture in an ice cream maker and freeze.

Tips & Warnings

  • If you don't have an ice cream maker, you can freeze the sorbet in a covered container. Stir every half-hour so the mixture doesn't freeze into a solid block.

on 8/8/2006 Don't let the sorbet sit in the freezer for 2 days and expect it to be a sorbet. Stir every 1/2 hour.
