How to Make Matzoh Brei

This breakfast treat - really matzoh French toast - is for the Jewish holiday of Passover, which prohibits the eating of leavened bread. It's so tasty and easy, though, you might want to hoard some extra matzoh to have it all the time. Serves one hungry person.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Black Pepper
  • Salt
  • 2 boards matzohs
  • 2 eggs

Step1
Beat the eggs together in a medium-sized mixing bowl, with salt and pepper.
Step2
Douse the matzoh with running water to soften it, then crumble into the bowl with the eggs. You can make the matzoh pieces large, small, or a mixture of both - it doesn't matter.
Step3
Melt a teaspoon or two of butter (if you're not eating meat with this meal) or warm a little vegetable oil in a skillet over medium heat.
Step4
Pour the egg and matzoh mixture into the hot skillet.
Step5
Cook until the bottom is browned (a few minutes), then turn the whole thing at once and cook the other side. It's okay if it falls apart; just go with it.
Step6
Slide the matzoh brei out of the pan and onto a plate.
Step7
Serve with maple or pancake syrup (if it's kosher for Passover), or, alternatively, with a little hot pepper sauce.

on 11/22/2005 We like it more "egg-y" so I use 3 eggs and 2 sheets of matzoh. Yum!
