Not every salad dressing has to be loaded with oil or mayonnaise. This recipe uses tomato juice and lemon juice to create a dressing with that familiar tang, but without oil. This recipe makes about 1 1/2 c. dressing.

Instructions

Things You'll Need:

  • 1 garlic cloves
  • 1/2 tsp. Tabasco sauce
  • 1 lemons
  • 1 splash Worcestershire sauces
  • 1 c. tomato juice
  • 1 tbsp. cider vinegars
  • 1 pinch ground cloves
  • 1 tsp. cracked black pepper - or to taste
  • 1/4 c. extra-virgin olive oil
  • 1 c. tomato juice
  • 1/2 tsp. Tabasco sauce
  • 1 tsp. cracked black pepper - or to taste
  • 1 tbsp. cider vinegars
  • 1 garlic cloves
  • 1 pinch ground cloves
  • 1/4 c. extra-virgin olive oil
  • 1 splash Worcestershire sauces
  • 1 lemons
  1. Step 1

Mince the garlic clove as finely as possible or press it through a garlic press into a mixing bowl.

  2. Step 2

Add all other ingredients - except the oil and lemon - and whisk together.

  3. Step 3

Whisk in the oil in a thin, slow and steady stream.

  4. Step 4

Halve the lemon and squeeze in the juice of one half.

  5. Step 5

Taste the dressing. It should be very tangy. Add more lemon juice as necessary.

  6. Step 6

Keep in mind that the dressing will separate fairly quickly, so whisk or shake it well just before using.

Tips & Warnings
  • Add more salt if desired. Taste the dressing before you do, however, because the tomato juice and Worcestershire and Tabasco sauces already contain salt.
  • This dressing can also be made in a food processor or blender.
