How to Make Chinese Chicken Salad

  • 6 to 8 servings lettuce
  • 3/4 c. scallions

  • 4 cooked chicken breasts
  • 3 c. packaged fried rice noodles

Instructions

      Slice the cooked chicken into thin strips and dust with the five-spice powder. Reserve.

      Place the vinegar, mustard and honey in a bowl and whisk together. Season with salt and pepper.

      Whisk in the sesame oil, then whisk in the vegetable oil.

      Taste the dressing and add more seasoning or sesame oil as necessary. Set aside.

      Arrange the lettuce on plates. Divide the chicken among the plates and top with the scallions and rice noodles.

Tips & Warnings

  • Iceberg, green-leaf or romaine lettuce works best for this recipe.

  • You can add sliced carrot, radish, daikon or other crispy vegetables to this salad. Peanuts and cashews are also common additions.
