How to Make Minestrone

Easy to make and low in fat to boot. This minestrone is hearty enough to serve as a main dish alongside a salad and some crusty bread. Serves three to four.

Instructions

Things You'll Need:

  • 1 c. chopped onions
  • 2 oz. dried pasta
  • 14 1/2 oz. tomatoes - cut up
  • 2 tbsp. freshly grated Parmesan cheeses
  • 1/2 c. sliced celery
  • 3/4 c. tomato juice
  • 1/2 tsp. minced garlic
  • 1 15oz. can white beans - such as cannellini
  • 1/2 c. chopped carrots
  • 1 medium sliced zucchinis
  • 1 c. cut up green beans
  • 1 c. shredded cabbages
  • 1 14 1/2 oz. can reduced-salt chicken broths
  • 2 tbsp. sliced fresh basil

  • 1 c. chopped onions
  • 2 tbsp. sliced fresh basil
  • 1 15oz. can white beans - such as cannellini
  • 1/2 tsp. minced garlic
  • 1 1/4 c. cold water
  • 2 oz. dried pasta
  • 2 tbsp. freshly grated Parmesan cheeses
  • 1 c. shredded cabbages
  • 1 c. cut up green beans
  • 1 medium sliced zucchinis
  • 1/2 c. chopped carrots
  • 1 14 1/2 oz. can reduced-salt chicken broths
  • 3/4 c. tomato juice
  • 1/2 c. sliced celery
  1. Step 1

    Mix broth, undrained tomatoes, onion, cabbage, tomato juice, carrot, celery, garlic and 1ΒΌ c. water in a large pot.

  2. Step 2

    Bring to a boil.

  3. Step 3

    Reduce heat, cover and simmer 20 minutes.

  4. Step 4

    Stir in kidney beans, zucchini, green beans and dried pasta.

  5. Step 5

    Return to a boil, reduce heat, cover and simmer 10 to 15 minutes more. Add salt and pepper to taste, and garnish with basil.

  6. Step 6

    Divide soup into bowls and top with grated Parmesan cheese.
