Combine oats, raisins (or other dried fruit of your choice), nuts (if desired), brown sugar, cinnamon, salt and nutmeg. Set aside.

Bring water to boil in a medium-sized saucepan. Slowly add oat mixture to boiling water, stirring constantly.

Cook for 1 minute, stirring.

Cover, remove pan from heat, and let stand 1 to 3 minutes, or until oatmeal is of desired consistency.

Serve, if you wish, with milk, or simply plain.
Tips & Warnings
You can make the oat mixture ahead of time and store, covered tightly, at room temperature. Feel free to double, triple or quadruple the recipe so you have a lot on hand.
The cooking process is the same for plain oatmeal.
For richer oatmeal, use milk instead of water, or use half water, half milk. Milk can burn, so use moderate heat when bringing it to a boil.
For a creamier texture, put the oatmeal in the cold liquid, then bring to a boil.
Chopped dates and dried apples are excellent in oatmeal.

You can improve that oatmeal recipe tremendously if you add 1/2 teaspoon of vanilla to it. I add it at the beginning and cook it in the microwave.
