How to Make Lamb Chops

This is a bare-bones how-to on making lamb chops. There are various ways to spice up the chops though - try mint jelly, mint pesto, or rubbing the meat with a mixture of your favorite herbs. Experiment and enjoy. Serves four. Does this Spark an idea?

Things You'll Need

  • 8 lamb rib or loin chops, cut 1 inch thick
  • garlic clove (optional)
  • 1 c. mint (fresh herb) (optional)
  • 2 tsp. mustard (optional)
  • 1 tbsp. olive (not virgin) oil (optional)
  • 1/4 c. grated Parmesan cheese (optional)
  • 1/4 c. sliced almonds (optional)
  • 1 tbsp. white wine vinegar (optional)
  • 1/2 c. chopped apple (optional)
  • 1/2 c. apple jelly (optional)
  • Groceries

Instructions

      Trim fat from meat.

      Place chops on the unheated rack of a broiler pan.

    • 3

      Broil chops 3 to 4 inches from heat for 7 to 11 minutes for medium doneness, turning once.

      Serve warm.

Tips & Warnings

  • For a mint pesto, combine 1 c. mint leaves, 1 clove garlic, and 1/8 tsp. pepper in a food processor. Pulse a few times. Add 3 tbsp. oil a little at a time, pulsing all the while. Add 1/4 c. grated Parmesan cheese and 1/4 c. slivered almonds and process until smooth. Serve chops with dollops of pesto on top.

  • For an apple glaze, heat 1/2 c. apple jelly, 2 tsp. mustard and a dash of pepper in a saucepan. Stir in 1/2 c. chopped apple, bring to boil, then reduce heat and let simmer 1 minute. Serve chops with glaze on the side.
