For a holiday treat or a sweet indulgence any time of the year, follow this recipe from Libby's. Serves 8.

Instructions

Things You'll Need:

  • 1 3/4 c. Libby's 100% Pumpkin
  • 1 1/2 c. (12 fl.oz can) evaporated milk
  • 3/4 c. granulated sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/2 tsp. ground ginger
  • 2 large eggs
  • deep-dish pie shell
  • 1/2 tsp. salt
  • Groceries
  • Knife
  • Mixing Spoons
  • Mixing bowls
  • Measuring Cups And Spoons
  1. Step 1

    Preheat oven to 425 degrees F.

  2. Step 2

    Combine sugar, cinnamon, salt, ginger and cloves in a small bowl.

  3. Step 3

    Beat eggs lightly in a large bowl.

  4. Step 4

    Stir in pumpkin and sugar-spice mixture.

  5. Step 5

    Gradually stir in evaporated milk and pour mixture into a pie shell.

  6. Step 6

    Bake for 15 minutes.

  7. Step 7

    Reduce temperature to 350 degrees F; bake for 40 to 50 minutes or until knife inserted near center comes out clean.

  8. Step 8

    Cool on a wire rack for 2 hours.

  9. Step 9

    Serve immediately, or refrigerate.

Tips & Warnings
  • For high altitude baking (6,000 feet and above), extend the second bake time to 55 to 60 minutes.
  • You can also make your own pumpkin puree. (See "How to Make Pumpkin Puree.")
  • To make your own pie crust, see "How to Make Piecrust Dough."
  • For a low-fat dessert, bake the pumpkin custard without the crust using a buttered ramekin or souffle dish.
  • Do not freeze the pie, as this will cause the crust to separate from the filling.
