How to Make Classic Libby's® Pumpkin Pie

- 1 3/4 c. Libby's 100% Pumpkin
- 1 1/2 c. (12 fl.oz can) evaporated milk
- 3/4 c. granulated sugar
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/2 tsp. ground ginger
- 2 large eggs
- deep-dish pie shell
- 1/2 tsp. salt

Preheat oven to 425 degrees F.

Combine sugar, cinnamon, salt, ginger and cloves in a small bowl.

Beat eggs lightly in a large bowl.

Stir in pumpkin and sugar-spice mixture.

Gradually stir in evaporated milk and pour mixture into a pie shell.

Bake for 15 minutes.

Reduce temperature to 350 degrees F; bake for 40 to 50 minutes or until knife inserted near center comes out clean.

Cool on a wire rack for 2 hours.

Serve immediately, or refrigerate.

Tips & Warnings
For high altitude baking (6,000 feet and above), extend the second bake time to 55 to 60 minutes.

For a low-fat dessert, bake the pumpkin custard without the crust using a buttered ramekin or souffle dish.
Do not freeze the pie, as this will cause the crust to separate from the filling.
