How to Make Nhopi (Cornmeal With Pumpkin)

Imagine this Zimbabwean ambrosia in your mouth. Now make it. Serves four as a side dish.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • Pinch Salt Or To Taste
  • Spinach
  • Saucepans
  • Wooden Spoons
  • 1/2 tsp sugars
  • 2 tbsp peanut butter
  • 1/2 lb cooked pumpkins - mashed
  • 2 c water
  • 1 c cornmeal

Step1
Boil the water in a heavy saucepan over high heat.
Step2
Whisk in the cornmeal, lower the heat, and cook, stirring frequently, until it becomes a porridge, about 10 minutes.
Step3
Add the pumpkin and stir to combine.
Step4
Add the sugar, peanut butter and salt and stir well to combine.
Step5
Cook the mixture for 3-5 minutes, until very warm throughout. Add water, or reserved pumpkin cooking water, if necessary to keep a desired consistency (your preference).
Step6
Serve immediately over fresh cooked or raw spinach.

Tips & Warnings

  • Substitute canned and prepared pumpkin puree to save time.
  • Use natural (unsweetened) peanut butter for best results.
