How to Make Ghanaian Soybean and Spinach Stew

This dish is rich rather than spicy. Egusie are the seeds of an African fruit similar to the pumpkin. Substitute pumpkin seeds if you can't find them. Serves 4 as a side dish or 2 as a main dish.

Instructions

Things You'll Need:

  • 1 chopped onions
  • 1/2 c. egusie or pumpkins seeds
  • 3 chopped tomatoes
  • 1 lb. chopped spinach
  • 1/4 c. cooked soybeans
  • blenders
  • 2 tbsp. red palm oils
  • large sauté pans
  • salt and pepper to taste
  • Salt And Pepper To Taste

  • 1/2 c. egusie or pumpkins seeds
  • 2 tbsp. red palm oils
  • 1/4 c. cooked soybeans
  • 1 chopped onions
  • large sauté pans
  • 1 lb. chopped spinach
  • 3 chopped tomatoes
  1. Step 1

    Heat the oil in a sauté pan over medium heat and cook the onion until golden. Add the tomatoes and cook five minutes longer.

  2. Step 2

    Put the egusie or pumpkin seeds and a few tbsp water in a blender to make a paste.

  3. Step 3

    Add the paste to the onion mixture. Stir and add salt and pepper to taste.

  4. Step 4

    Add 1/2 c. to 1 c. water, as needed, to make a thick sauce. Simmer for five minutes.

  5. Step 5

    Add the soybeans and simmer for eight minutes.

  6. Step 6

    Place the spinach over the sauce, cover the pan partially with a lid, and cook for five minutes.

  7. Step 7

    Mix the spinach with the sauce and simmer for 10 minutes.

  8. Step 8

    Serve immediately with rice or boiled plantains.

Tips & Warnings
  • Red palm oil can be found in specialty food stores. Substitute butter or cooking oil if it's unavailable.
  • You can find soybeans in the bulk foods sections of supermarkets and in health food stores.
