How to Make Ghanaian Black-Eyed Beans
Black-eyed beans, also called cowpeas, are a staple in some parts of Africa. They probably came to the United States via the African slave trade. Serves 4. Does this Spark an idea?
Things You'll Need
- 1 white or yellow onions - sliced
- 2 tomatoes - chopped
- bowls
- 1/2 red chili peppers - chopped
- stockpots
- cutting boards
- potato mashers
- 1-2 tbsp red palm oils
- sauté pans
- salt and pepper to taste
- 1 c. black-eyed beans
- Salt And Pepper To Taste

Instructions

Cook the black-eyed beans for 1 hour or according to package directions.

Mash the cooked beans and set aside.

Heat the oil in a sauté pan over medium heat and add the onion and tomatoes, stirring frequently, for about 3 minutes.

Add the mashed beans and chili pepper; add salt and pepper to taste.

Cook for 10 minutes, stirring occasionally. You may need to add a little water if the mixture becomes dry.

Serve hot with fried plantains or rice.

Tips & Warnings
Substitute 1/2 tsp chili powder for fresh chili peppers.
Cook the beans ahead or use canned beans to save time.
Red palm oil can be found in specialty food stores. Substitute butter or cooking oil if it's unavailable.
