Avocados are everywhere. They're on our toast, part of our tacos, and yes, in our favorite dip. Just when you thought that this superfood has found every which way into the three meals of the day, we've found an excuse to include it in one more: happy hour. If you haven't tried avocado in your post-work cocktail, now is the time. Avocado pairs perfectly with mango and pineapple, and its creamy texture adds a velvety smoothness to their tropical flavors. Add rum, simple syrup and ice, and you've got a irresistibly sweet daiquiri that doesn't require booking a beach vacation to enjoy.
Things You'll Need
- 1 cup granulated sugar
- 1 cup water
- 1/2 avocado, peeled and pit removed
- 5 ounces frozen mango
- 1 cup fresh pineapple chunks
- 2 ounces white rum
- 1 cup ice cubes
Step 1: Make the Simple Syrup
Heat the sugar and water in a small saucepan over medium heat until dissolved. Transfer the syrup into a container, and place it in the fridge to cool for about 10 minutes.
Only two tablespoons of simple syrup are needed for this recipe, so keep the rest in the refrigerator to have on hand for more drinks later!
Step 2: Make the Daiquiris
Place the avocado, frozen mango, pineapple, rum and ice cubes in a blender. Pulse until the mixture is smooth.
Step 3: Garnish and Serve
Pour the drinks into glasses. Garnish with slices of fresh pineapple and cheers!
