Don't fret if you didn't finish all the meat on taco night. You can create a whole new meal by using the leftover beef, tortilla chips and cheese to make nachos. Because the meat is already seasoned for tacos, this effortless snack will be bursting with flavor. Beans, sliced jalapenos, diced onions and tomatoes also make excellent additions. Try topping the nachos with a few scoops of salsa, sour cream or guacamole before serving.
Things You'll Need
- Plate or baking sheet
- Tortilla chips
- Shredded cheese
Arrange the tortilla chips in a single layer. For microwave cooking, place the chips on a microwave-safe plate. For oven cooking, place the chips on a baking sheet lined with aluminum foil.
Spoon some of the beef over the tortilla chips, then top with a layer of shredded cheese. Cheddar and Monterrey jack are both excellent for nachos.
Spread another layer of chips on top of the cheese, then top with the beef and shredded cheese.
Place the nachos in the microwave or a preheated 425-degree Fahrenheit oven. Cook until the chips and beef are warmed and the cheese is melted, about 3 minutes in the microwave and 7 minutes in the oven.
