How to Change iPhoto From Popping Up When Your iPhone Is Plugged In
Mac OS X's image editing software iPhoto lets you download and edit images from your iPhone's photo library. The program's default settings make iPhoto launch automatically when you connect your iPhone or another device that includes a digital camera. You may disable this setting if you'd rather launch iPhoto manually or if you want to use your iPhone with another default program. IPhoto's settings also let you choose to launch the alternative photo viewer Image Capture instead.

Tips & Warnings
Image Capture doesn't include any tools for editing images and can only download your iPhone's pictures to your hard drive.
Changing iPhoto's automatic launch option will prevent other cameras from opening the application as well.
