How to Clean a Deep Fryer in a Food Truck

Things You'll Need
- Latex gloves
- 5-gallon bucket
- Hose (optional)
- 1/2 cup grease-removing liquid dish soap
- Steel wool sponges (multiple)
- White vinegar (amount will vary)
- Standard sponges (multiple)
- 3 cups baking soda
- Paper towels (multiple)

Slide on a pair of latex gloves to protect your skin. Remove the fryer baskets and removable knobs. Contact your local Department of Consumer and Regulatory Affairs for mobile food truck cleaning rules and guidelines in your area.

Turn off the fryer. Allow the grease to cool to 100 to 150 degrees Fahrenheit. Drain the grease into the fryer's pre-fabricated drain unit for subsequent reuse or removal.

Fill the fryer with warm water using a hose or the 5-gallon bucket. Pour a 1/2 cup of grease-removing liquid dish soap into the water. Turn on the fryer. Boil the water mixture for five minutes. Turn off the fryer and drain the mixture.

Scrub the sides and base of the fryer with steel wool sponges. Scrub all knobs and baskets with the steel wool sponges as well. Rinse the fryer and all additional components -- baskets and knobs -- with warm water.

Refill the fryer with water. Add one part white vinegar for every nine parts of water. Allow the mixture to remain in the fryer for five minutes

Drain the water and vinegar mixture. Scrub the fryer and all additional components with standard sponges. Rinse the fryer and components with warm water.

Fill the bucket with three gallons of water and at least 3 cups of baking soda. Add more baking soda, if necessary, until the mixture has a paste-like consistency.

Soak a clean sponge into the mixture. Scrub the fryer and the components with the mixture. Rinse the fryer and components with warm water. Wipe the fryer and components dry with paper towels.
