  • 1/2 cup milk
  • 1 1/2 cups buttermilk
  • 3/4 cup vegetable oil
  • Large egg, separated

  • Ripe banana, mashed
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp honey

Instructions

  1. Prepare the Batter

      Plug in the waffle maker and spray the bottom and the top with nonfat cooking spray. Heat your oven to 225 degrees to keep a plate of waffles warm.

      Put a tub of margarine (or butter) and a small glass pitcher of maple syrup on the stove so that they warm while you prepare the waffles.

      Mix the flour, cornstarch, baking powder, baking soda, cinnamon and salt in a large bowl. Combine the milk, buttermilk, vegetable oil and egg yolk in a smaller bowl and stir. Then add the mashed banana and stir again.

      Beat the egg white with a hand mixer until soft peaks form. Add the sugar and beat until the peaks turn hard, then beat in the vanilla and honey.

      Pour the buttermilk mixture into the dry ingredients. Stir until just mixed, then add the whipped egg white mixture and blend slightly. Do not overmix or the waffles will not be light and fluffy.

Close the lid and resume baking until the waffle is brown and crisp.
