Tips & Warnings
Knead the fondant with your hands before you add colored gel paste. Add two or three small drops of colored gel paste to the fondant and knead it until the color distributes evenly throughout the icing.
Wrap leftover fondant in plastic wrap. Store the fondant in an airtight container on the counter top. Leftover fondant has a shelf life of 1 to 2 months.
Repair cracks on fondant with shortening.
Never refrigerate or freeze fondant because you will ruin the icing.
Never smooth cracks with water because it dissolves the sugar in the fondant.
