Bamboo steamers are a traditional cooking method, used for centuries to prepare a variety of Asian dishes. The steamers are inexpensive and because they require no oil, they are useful for cooking healthy, low-fat foods, including pot stickers. A form of dumplings, pot stickers are filled with an endless combination of ingredients, including shrimp, chicken, beef and/or vegetables. Pork makes a savory and nutritious filling. Pork is especially rich in phosphorus, potassium and several forms of vitamin B. For the best flavor, use fresh pork with no seasonings added. Does this Spark an idea?

  • 1 pound ground pork
  • 4 green onions, chopped
  • 2 teaspoons fresh ginger, minced
  • 2 garlic cloves, minced
  • 2 teaspoons sesame oil
  • 1 tablespoon rice wine
  • 1/4 teaspoon pepper
  • 1 tablespoon soy sauce
  • 1 large egg, beaten
  • 1/3 cup canned bamboo shoots or water chestnuts, drained
  • 1-pound package won ton wrappers
  • Bamboo steamer
  • Cabbage leaves or parchment paper
  • Large pan or wok

Instructions

      Place the ground pork in a large mixing bowl. Stir in green onions, ginger, garlic, sesame oil, rice wine, pepper, soy sauce, sesame oil, egg and bamboo shoots or water chestnuts. If desired, you can substitute cabbage or bok choy in place of bamboo shoots or water chestnuts. You can also use scallions or regular onions instead of green onions. Mix well.

      Place a wonton wrapper on a flat surface. Put about 1 teaspoon of pork filling in the center of the wrapper.

      Dip your finger in water, then use your finger to moisten the edges of the won ton wrappers. The moisture will help the edges to seal.

      Gather the corners of the won ton wrapper together like a pouch, and then twist the top to seal. Alternatively, fold one corner over the filling to form a triangle, then press the edges together.

      Line a bamboo steamer with cabbage leaves. You can also line the steamer with parchment paper. The cabbage leaves or parchment paper aren't required but they simplify clean up.

      Arrange the pot stickers in the bamboo steamer, allowing at least 1/2 inch between each pot sticker.

      Place the steamer over a large pan or wok filled with about 2 inches of boiling water. Steam the pot stickers for 20 minutes, or until the pork filling is completely cooked.
