There's a reason that tamales are the food of choice for large gatherings and celebrations. You can make them weeks or months in advance, freeze them and reheat just before you need them. You can microwave tamales, but they tend to dry out. Reheating tamales in a steamer helps keep them moist and firm while ensuring that they are heated through. If you don't have a steamer, you can use a

      Put water in the steamer. The water level should be halfway between the bottom of the pan and the steamer tray.

      Heat the steamer over medium-high heat until the water boils.

      Place the tamales vertically in the steamer, open end up. Reduce the heat to medium-low and cover.

      Cook the tamales until they are heated throughout. Frozen tamales must cook for 20 to 30 minutes. Refrigerated tamales heat through in 10 to 15 minutes.

Tips & Warnings

  • You can reheat tamales in the oven. Wrap tamales in foil, place them on a baking sheet in a single layer and cook in an oven at 350 to 375 degrees Fahrenheit for 30 to 40 minutes.

  • Cooking more than two dozen tamales at one time might increase your cooking time.
